Beim Durchsehen einiger Rezepte bin ich glatt auf 10 verschiedene Kartoffelbrot-Rezepte gestossen und muss zu meiner Schande gestehen, dass ich bisher noch keines gebacken hatte. Aus den Rezepten ist zu entnehmen, dass die Kartoffeln im Teig zur Frischhaltung und zu einer saftigen Krume beitragen. Für eine bevorstehende Wanderung eigentlich genau das Richtige...
Looking through some recipe i've encountered 10 different potato bread recipes and must confess to my shame that I hadn't baked one previously. What i could get from the recipes is, that potatoes in the dough contribute to freshness and a juicy crumb. For an upcoming hike actually just right...

Nun bin ich doch noch fündig geworden und kann das pão alentejano backen, welches ich bei meinem letzten Aufenthalt in Portugal geniessen konnte. Wie bei allen traditionellen Gerichten gibt es eine grosse Vielfalt an unterschiedlichen Rezepten. Aus den Erinnerungen heraus habe ich Geschmack, Farbe und mögliche Zusammensetzung mehr oder weniger erraten. Durch Zufall habe ich dann bei Björn (der brotdoc) ein Rezept gefunden, welches exakt dem entsprach, was ich mir für das pão alentejano vorgestellt hatte. Björn nennt es mediterranes Landbrot und recht hat er. Ich hatte mich auf eine länger Testreihe eingestellt aber zu meiner Überraschung war der erste Versuch bereits der absolute Treffer...
I was looking for a pão alentejano recipe for a long time and now i was successful. Since i came back from a holiday at the Algarve / Alentejo in Portugal, i was trying to find a recipe of the wonderful country bread i have eaten there. As with all traditional recipes, there are a wide variety of different versions. Out of my memories i tried to guess taste, color and composition more or less. By accident I have found at Björn's blog (der brotdoc) a recipe, which corresponded exactly to what I had imagined for the pão alentejano.
