Ein weiterer Schritt in der Erforschung sämtlicher Kantonsbrote der Schweiz: das Brasciadela oder Bündener Ringbrot. Es wird aus Roggen- und Weizenmehl hergestellt und hat eine Ringform. Die Form diente Früher dazu, das Brot aufzuhängen und zu trocknen, damit es möglichst lange haltbar blieb. Die Zeiten sind zwar vorbei, die Ringform ist aber geblieben und hat zugegebenermassen einen gewissen Charme...

Bio-Weizen-Dinkel Partybrötchen / organic wheat spelt party rolls

Die Suche nach Rezepten, die sich gut in den Alltag integrieren lassen, insbesondere wenn Gäste über Nacht bleiben, ist nicht immer einfach. Eine weiterer Meilenstein ist die gnadenlos ehrliche Kritik von Kindern. Keine Spur von Mitgefühl dem Hobbybäcker gegenüber - Brote oder Brötchen müssen dem Vergleich mit professioneller Backware standhalten.
Ich hatte mir vorgenommen, frische Mohn- und Sesambrötchen (neben drei Brotsorten) auf den Frühstückstisch zu bringen, ohne dafür Mitten in der Nacht aufzustehen oder eben Brötchen nur auftauen und aufbacken zu müssen. Ich wollte hier gutes Vorbild sein und den Kindern beweisen: ja, Brot und Brötchen können auch zu Hause hergestellt werden und schmecken prima. Kein leichtes Unterfangen. Ich hatte zudem keine Zeit mehr, eine Testreihe zu backen und deswegen bin ich glatt zu Lutz auf seinen Plötzblog gegangen. Hier weiss ich dass die Rezepte funktionieren und für den Hausgebrauch zurechtgeschnitten sind...
Search for recipes that can be easily integrated into everyday life, especially when there are guests overnight in our home is not always easy. A further milestone is the  honest feedback of children. No trace of compassion for the home bakers - bread or rolls must bear comparison with professional bakery product.I wanted to make fresh poppy and sesame buns (next three breads) to bring to the breakfast table, without getting up in the middle of the night. I wanted to be a good role model to the children here and prove: yes, bread and rolls can also be prepared at home and they taste great. No easy task. I also had no time to bake a test series and so I went straight to Lutz on his Plötzblog. Here I know that the recipes work and are tested to work at home as well.

Es ist wieder an der Zeit, ein weiteres Kantonsbrot der Schweiz vorzustellen: das Jurabrot aus dem Kanton Jura. Ich habe es bereits schon seit längerer Zeit in der Planung und nun habe ich endlich den Mut gefasst, das reine Hefebrot zu backen. Die Schwierigkeit ist hier nicht so sehr das Brot oder der Teig an sich - es ist das Jurawappen, welches als Krönung auf dem Brot eingeritzt wird, bzw. mit Mehl aufgestäubt wird. Kein leichtes unterfangen...

The difficulty here is not so much the bread or dough itself - it's the coat of Arms, which is scored as a coronation on the bread or dusted with flour. Not easy to catch ...

Bio-UrDinkel-Vollkorn mit ganzen Dinkelkörnern / Organic Spelt whole meal bread with whole spelt grains

Vor kurzem hatte ich bereits ein reines 100% Bio-Roggenvollkornbrot gebacken und war sichtlich begeistert. Ein Vollkornbrot mit einer Mischung aus Roggen, Weizen und Dinkel hatte ich auch bereits ausprobiert. Nun liegt es Nahe, ein reines, 100% Bio-Dinkelvollkornbrot zu backen. Dinkel hat einen sehr schönen mild-nussigen Geschmack. Lutz hat bereits in seinem Plötzblog ein reines Dinkelbrot und ein freigeschobenen Dinkelvollkornbrot vorgestellt - ich habe beide bereits nachgebacken und war sehr zufrieden. Nachdem ich aber das Bio-Roggen-Vollkorn mit ganzen Körnern geniessen konnten und ich auf eine meiner Reisen ein Bio-Dinkelvollkornbrot kaufen konnte, welches einen leichten Geschmack nach Rübenkraut hatte, habe ich mich auf die Suche begeben und bin auch fündig geworden...
I recently made a pure 100% organic whole grain rye bread and was visibly excited. A whole-grain bread with a mixture of rye, wheat and spelt I mad as well. Now it is time to bake a 100% pure organic spelled wholemeal bread. Spelt has a very nice mild nutty flavor. Lutz has already been presented on his blog Plötzblog a pure spelt bread and a hearth whole grain spelt bread - both i have already made and was really pleased. But after I could enjoy the whole grain rye with whole grains and I could buy at one of my trips an organic whole grain spelled bread, which had a slight taste of sugar syrup, I have put myself on a search and was succesful...
